I got the urge to make potato soup last night. So that happened lol. 

I made more pumpkin muffins today because I'm obsessed and they're so good.

Pumpkin muffins 

Ingredients 

•3/4 cup almond flour 

•1/2 tsp baking soda 

•1 tsp cinnamon 

•1/4 tsp ground cloves 

•1/4 tsp ground nutmeg

•Dash of salt 

•2 eggs 

•3 tbsp maple syrup 

•1/2 cup pumpkin purΓ©e  


Directions

•Preheat oven to 350 degrees 

•In a large bowl mix together the almond flour, baking soda, cinnamon, cloves, nutmeg, and salt

•In a separate bowl whisk together eggs, maple syrup, and pumpkin purΓ©e 

•Combine wet and dry ingredients until we’ll blended 

•Coat muffin pan with oil or paper liners 

•Fill muffin tins half full, bake in the oven for 22-24 minutes. Pierce the center with a toothpick and it should come out clean 


•Put almond butter or creamed honey on top πŸŽƒπŸŽƒπŸŽƒ

I got all my scrapbook stuff into my car and headed to Brooke's. We checked out everything we already had and then went to look for a book for Brooke at Hobby Lobby, JoAnn Fabrics, and didn't find anything she liked. Headed to JT's to set up our scrapbook area. Got some food and set up as much as we could. 

I'm excited for simmer pot season!
