The drive to Mackinaw City was not bad at all. The truck is still saying the right lamp light is out, even though it is not. We have to look more into that. Whenever we use the right turn signal the truck also tells us the trailer is disconnected 😑😑

I guess I never realized how huge the Mackinac Bridge really is. It's bigger than the Golden Gate. Cherry hates when we drive over it. She sat on my lap the entire trip. Figaro laid in the carrier and took many naps. Once we got to the campground he sat on my lap as well. 

Hooking up was super easy. We probably got everything done in fifteen minutes. We should time ourselves next time. This campground is definitely one of the nicer ones that we will go to. The place has 600 sites and is right on Lake Huron. There's a huge camp store, putt-putt, playgrounds, wooden sculptures, pool, shuttle, bathrooms, showers, dog play areas, hiking trails, and small beaches with fire rings.You can see the Mackinac Bridge from our camper. We have a neighbor to our right but no left or back neighbors. 

The weather is perfect. Stays in the high 60's-low 70's. Super windy though.

Today was spent hanging out around the campground and checking everything out. We made our meal plans for the week and picked up what was needed from Walmart. 
We had coffee on the beach. Went to Walmart. Got back and walked the campground. Checked out the spots with all the fifth wheels, their log cabins, more primitive camping spots, and the other spots on the sandy beach. Took the hiking trail to what looks like a spot where they are adding more campsites. We got some history on the place as well. The owners are husband and wife that actually lived in one of the cabins that they rent out to people now. They lived here with their four kids as they went to work on this campground. They bought this property in 1963 and they got it for pretty cheap because nobody wanted this land. People called the land a "wasteland" because it wasn't good for farming. Everybody in the area told them that their dreams were impossible. They opened in 1964 with only 12 campsites and today they have 600 and more to come!
We had to checkout the playground because there was a merry-go-round but with swings. So fun lol. We probably looked like lunatics.
We watched the sunset over the bridge and the water. 
I made roasted garlic tomato bisque with grilled cheese crotons. So good. I'm super excited it's soup season!

Recipe- 
3 heads of garlic
Olive oil
1 ½ tbsp red miso (I only had miso so I used that instead)
4 tbsp sun dried tomatoes
1 pint cherry tomatoes
5 ripe larger tomatoes, quartered
1 large yellow onion, quartered
1 can diced tomatoes
1 cup vegetable broth
1 can of coconut milk
½ teaspoon dried oregano
½ teaspoon thyme
2 teaspoon red pepper flakes
Lots of fresh basil
2 tsp sugar
Salt to season

  • Preheat oven to 400 F
  • Slice the tops off of garlic heads and remove loose papery outer layers
  • Quarter your onion and larger tomatoes
  • On a large greased baking sheet pan, arrange the quartered onions and tomatoes, whole cherry tomatoes, and garlic heads
  • Drizzle olive oil generously over everything
  • Make sure that the exposed garlic cloves are oiled
  • Sprinkle with salt, red pepper flakes, thyme, and oregano
  • Roast in oven for 1 hour
  • Remove roasted garlic and pop into freezer for 20 minutes to cool
  • In a blender (I used an immersion blender- easy to travel with, takes up less room) add the roasted tomatoes and onions. Squeeze the cooled garlic into the blender as well. Add the miso, fresh basil, sun dried tomatoes, can of tomatoes and blend on high until smooth
  • In a large potion medium heat add the blended tomatoes. Gradually add the can of coconut milk while stirring. Do this with the vegetable broth as well. 
  • Stir in the sugar
  • Make grilled cheese as you normally would and cut into small squares
  • Top your soup with more basil and the grilled cheese croutons

After dinner we went and walked the campground at night and sat on the rocks looking out to the bridge while we played our favorite sad songs lol.
